Give your salads some Soul

There's nothing worse than a limp, damp and soggy salad. The best salads are made up of a combination of flavours, textures and colours.

A good dressing makes a great salad.

Luckily for you, we know a thing or two about salad dressings.

Here are 4 salad dressing recipes ready to level up your leafy bowls of goodness.

We use a clean Soulful pot to throw all the ingredients in before screwing the lid on and shaking it like a polaroid picture (make sure that lid is ON!).

Each recipe makes approx 250ml

 

Carrot & Ginger Dressing

140ml carrot juice

40ml mirin

1 tsp ginger puree or use 1/2 for powder

1 1/2 tbsp tamari or soy sauce 

1 tbsp red wine vinegar

2 tsp rice vinegar

1/2 - 1 tsp chopped chilli

 

Beetroot Dressing

55ml beetroot juice

55ml tomato juice

1 1/2 tbsp water

70ml apple juice

1-1/2 tsp agave syrup

1 1/2 apple cider vinegar

1 tsp dijon mustard

1-1/2 tsp soy sauce

Pinch of salt & pepper

  

Soy, Sesame & Ginger Dressing

1 tbsp sesame seed oil

100ml rapeseed oil

2 tbsp tamari or soy sauce

1 1/2 tbsp agave syrup

1/2 - 1 tsp chopped chilli

2 tsp balsamic vinegar

1 1/2 tbsp rice vinegar

3 tsp ginger puree 

1 tsp chopped garlic

Pinch of chopped coriander

1 tsp water

  

Lime & Mint Dressing

A handful of chopped fresh mint (leave out the stalks)

Juice of 5-6 limes

1/2 tsp dijon mustard

2 1/2 tbsp rapeseed oil

2 1/2 tbsp agave syrup

60ml water

1/4 tsp turmeric

Pinch of salt & pepper
